2 boneless, skinless chicken breasts, sliced

1 tablespoon olive oil

1 bell pepper (red or green), sliced

1 medium onion, sliced

2 teaspoons fajita seasoning (store-bought or homemade)

Salt and pepper to taste

4 large flour tortillas

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Optional toppings: sour cream, guacamole, salsa, avocado slices, fresh cilantro

Instructions
 

Prep the Chicken: In a large bowl, combine the sliced chicken with the fajita seasoning, salt, and pepper. Make sure the chicken is well-coated.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for about 3-4 minutes until they are tender and slightly caramelized. Return the cooked chicken to the skillet and stir to combine.

        Prepare Quesadillas: Lay one tortilla on a flat surface. Sprinkle half of the cheese evenly over one half of the tortilla, add a generous portion of the chicken and veggie mixture on top, and then sprinkle with the remaining cheese. Fold the tortilla over to create a half-moon shape.

          Cook Quesadillas: In the same skillet (you may need to wipe it clean), heat a small amount of oil over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, until golden brown and the cheese has melted. Repeat with the remaining tortillas.

            Slice and Serve: Once the quesadillas are cooked, remove from the skillet, slice into wedges, and serve hot with your choice of toppings like sour cream, guacamole, salsa, and fresh cilantro.
