1 cup grated zucchini (well-drained)

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/3 cup vegetable oil

2 large eggs

1 tsp vanilla extract

1/2 cup chocolate chips (optional for extra richness)

1/4 cup powdered sugar (for dusting)

Wraps: 4-6 large or medium tortillas or flatbreads

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a baking dish by greasing it lightly or lining it with parchment paper.

    Prepare Zucchini: Grate the zucchini using a box grater or food processor. Ensure it’s well-drained by pressing it between paper towels to remove excess moisture.

      Mix Dry Ingredients: In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. This helps to aerate the flour and mix the dry ingredients evenly.

        Combine Wet Ingredients: In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth and well combined.

          Incorporate Zucchini: Stir in the grated zucchini into the wet ingredients until evenly distributed.

            Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring just until combined. If using, gently fold in the chocolate chips for a richer flavor.

              Bake the Cake: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
