12 oz linguine pasta

1 lb boneless chicken breasts, diced

1/2 cup unsalted butter

4 cloves garlic, minced

1 tbsp smoked paprika

1 tsp onion powder

1 tsp dried thyme

1/2 tsp cayenne pepper (adjust for spice preference)

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 cups spinach, fresh

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Zest and juice of 1 lemon

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.

    Prepare the Chicken: In a large skillet over medium heat, melt 1/4 cup of the butter. Add the diced chicken and season with salt and pepper. Sauté until the chicken is golden and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining 1/4 cup of butter. Once melted, stir in the minced garlic, smoked paprika, onion powder, dried thyme, and cayenne pepper. Cook for about 1 minute until fragrant.

        Combine Ingredients: Reduce the heat to low and add the heavy cream to the skillet. Stir until combined. Add the grated Parmesan cheese and mix until melted and creamy. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
