Easy Creamy Tomato Basil Soup

2 cans (14 oz each) whole peeled tomatoes (preferably San Marzano)

3 cups vegetable broth

1 tsp sugar (to balance acidity)

1 cup heavy cream (or coconut milk for a vegan option)

1/2 cup fresh basil leaves, chopped

Salt and pepper, to taste

Crusty bread or grilled cheese sandwiches, for serving

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5-7 minutes, or until it becomes translucent. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Add the Tomatoes: Pour in the canned whole peeled tomatoes (with their juices) and use a wooden spoon to break them up slightly. Cook for 2-3 minutes, allowing the flavors to mingle.

      Incorporate the Broth: Add the vegetable broth and sugar to the pot. Stir well and bring the mixture to a gentle simmer. Let it simmer for about 20 minutes to allow the flavors to develop.

        Blend the Soup: Remove the pot from heat and use an immersion blender to puree the soup until it’s smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth.
