Ingredients

1 pound ground pork (or chicken/turkey for a lighter option)

4 cups coleslaw mix (cabbage and carrots)

3 green onions, chopped

3 cloves garlic, minced

1 teaspoon minced ginger (or ½ teaspoon ginger powder)

3 tablespoons soy sauce (low sodium if desired)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for heat)

Salt and pepper to taste

Sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Instructions

Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat.

Cook the Meat: Add the ground pork (or chosen meat) to the pan. Season with salt and pepper. Cook thoroughly until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes).

Add Aromatics: Once the meat is nearly cooked through, stir in the minced garlic and ginger. Cook for an additional 1-2 minutes until fragrant.

Mix in the Veggies: Add the coleslaw mix and chopped green onions to the pan. Stir well to combine, cooking for another 3-4 minutes until the coleslaw is slightly wilted.

Season: Pour in the soy sauce, rice vinegar, and sriracha (if using). Toss everything together and cook for another 2 minutes to blend the flavors.

Serve: Remove from heat and garnish with sesame seeds and fresh cilantro if desired. Serve hot, enjoying the wholesome goodness!
