Easy Grilled Thai Chicken Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

1/4 cup coconut milk

2 tbsp soy sauce

1 tbsp fish sauce

1 tbsp brown sugar

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp ground coriander

1/2 tsp turmeric powder

Zest and juice of 1 lime

2 green onions, finely chopped

Fresh cilantro, chopped (for garnish)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a large bowl, whisk together the coconut milk, soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, ground coriander, turmeric powder, lime zest, and juice. This will create a flavorful marinade.

    Marinate the Chicken: Add the chicken pieces to the bowl and toss until well coated in the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. If using charcoal, make sure the coals are glowing red and covered with white ash.

        Skewer the Chicken: Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Once the grill is hot, place the skewers on it. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Garnish and Serve: Remove the skewers from the grill and let them rest for a few minutes. Garnish with chopped green onions and fresh cilantro. Serve with lime wedges and your choice of dipping sauce, such as peanut sauce or sweet chili sauce.
