Easy Homemade Chicken Pot Pie Casserole

2 cups cooked chicken, shredded or diced

1 cup frozen mixed vegetables (peas, carrots, corn, green beans)

1 cup cream of chicken soup (or homemade if preferred)

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1/2 teaspoon black pepper

2 cups biscuit mix (like Bisquick)

1 cup milk

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large bowl, combine the cooked chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, thyme, and black pepper. Stir until well mixed.

      Pour the chicken mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

        In another bowl, whisk together the biscuit mix and milk until just combined. Do not over-mix; small lumps are okay.

          Spoon the biscuit mixture over the chicken mixture in the casserole dish, covering it as evenly as possible.

            Sprinkle shredded cheddar cheese on top of the biscuit batter.

              Bake in the preheated oven for about 30-35 minutes, or until the biscuit topping is golden brown and the filling is bubbly.

                Let cool for a few minutes before serving. Optionally, garnish with fresh parsley for a pop of color.
