Easy Italian Sausage and Peppers Pasta Dish

12 oz penne pasta

1 lb Italian sausage (sweet or spicy, your choice)

2 tbsp olive oil

1 medium onion, thinly sliced

2 bell peppers (red and yellow), sliced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1/2 cup chicken broth or white wine

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes. Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and bell peppers. Sauté for about 5-7 minutes, until soft. Add the minced garlic and cook for another minute until fragrant.

        Combine Ingredients: Return the cooked sausage to the skillet with the vegetables. Add the diced tomatoes, chicken broth (or white wine), Italian seasoning, and red pepper flakes, if using. Stir well to combine and simmer for about 5-10 minutes, allowing the flavors to meld.

          Mix in Pasta: Add the cooked penne pasta to the skillet. If the mixture seems dry, add a little of the reserved pasta water, a few tablespoons at a time, until you reach the desired consistency. Toss everything together to coat the pasta evenly.

            Season to Taste: Taste the dish and season with salt and pepper as needed.
