1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

4 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking powder

Powdered sugar (for dusting)

Optional: chocolate sauce or fruit preserves (for serving)

Instructions
 

Prepare the batter: In a medium saucepan, combine the water and butter. Bring to a gentle boil over medium heat until the butter is fully melted.

    Add the flour: Once the butter is melted, remove the saucepan from heat and add the flour and salt all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.

      Cool the mixture: Allow the dough to cool for about 5 minutes. It should be warm but not hot.

        Incorporate the eggs: Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in the vanilla extract and baking powder until fully combined.

          Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

            Pipe the puffs: Transfer the dough into a piping bag fitted with a large round tip (or use a zip-top bag and cut off one corner). Pipe mounds of dough about 1 to 1.5 inches wide onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the puffs are golden brown and have risen significantly.

                Cool and dust: Once fully baked, remove the nun's puffs from the oven and let them cool slightly on a wire rack. Dust generously with powdered sugar before serving.
