1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 can (14 oz) diced tomatoes (with juices)

2 cups vegetable broth (or chicken broth)

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for heat)

½ cup heavy cream (or coconut cream for a vegan option)

1 cup shredded mozzarella cheese (or vegan cheese)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Grated Parmesan cheese (for serving, optional)

Instructions
 

Sauté Aromatics: In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and sauté for an additional minute until fragrant, being careful not to burn it.
