Easy Pork Fried Rice

1 cup cooked jasmine rice (preferably day-old)

200g pork tenderloin or pork shoulder, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

2 tablespoons vegetable oil (divided)

2 large eggs, lightly beaten

1 cup frozen peas and carrots (or mixed vegetables)

3 green onions, chopped (white and green parts separated)

2 cloves garlic, minced

Salt and pepper to taste

Optional: sesame seeds for garnish

Marinate the Pork: In a bowl, combine the sliced pork, soy sauce, and oyster sauce. Let it marinate for at least 15 minutes to enhance the flavor.

    Prepare the Rice: If you're using freshly cooked rice, spread it on a tray to cool completely and dry out a bit. This helps prevent sticky fried rice. Day-old rice is ideal!

      Scramble the Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble them until just set. Remove the eggs from the pan and set them aside.

        Cook the Pork: In the same skillet, add another tablespoon of vegetable oil. Increase the heat to high and add the marinated pork. Stir-fry for about 4-5 minutes or until cooked through. Remove the pork from the pan and set aside.

          Sauté Vegetables: In the same pan, add a bit more oil if needed. Toss in the minced garlic and white parts of the green onions. Sauté for about 30 seconds until fragrant. Then add the frozen peas and carrots. Cook for another 2-3 minutes until heated through.

            Combine Everything: Add the cooked rice to the pan, breaking up any clumps. Stir well to combine with the vegetables. Add the cooked pork and scrambled eggs back into the mixture. Drizzle with sesame oil and season with salt and pepper. Stir-fry for an additional 2-3 minutes until heated through.
