Easy Shrimp Fried Rice with Peas and Carrots

2 cups cooked jasmine rice (preferably chilled)

1 lb medium shrimp, peeled and deveined

1 cup frozen peas and carrots mix

2 tablespoons vegetable oil (divided)

3 cloves garlic, minced

2 large eggs, beaten

3 tablespoons soy sauce (or to taste)

1 tablespoon sesame oil

2 green onions, finely chopped

Salt and pepper to taste

Optional: a drizzle of sriracha or your favorite hot sauce

Preparation: Start by ensuring your cooked jasmine rice is properly chilled. This helps to keep the rice from clumping together during frying. If you haven’t cooked the rice yet, it's best to make it a few hours in advance or the day before.

    Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp to the pan, seasoning lightly with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove them from the skillet and set aside.

      Scramble the Eggs: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the beaten eggs and scramble them for 1-2 minutes until fully cooked. Move the scrambled eggs to one side of the skillet.

        Combine Ingredients: Add the frozen peas and carrots to the other side of the skillet, mixing them with the eggs. Stir in the cooked rice, ensuring to break apart any clumps and mix everything together thoroughly.

          Season the Rice: Pour the soy sauce and sesame oil over the rice mixture, stirring continuously to ensure even coating. Return the cooked shrimp to the skillet and gently mix until well combined. Taste the fried rice and adjust seasoning with additional salt, pepper, or soy sauce as necessary.

            Garnish and Serve: Once everything is heated through, turn off the heat and sprinkle chopped green onions on top. Serve immediately. For an extra kick, offer sriracha or hot sauce on the side.
