Ingredients

For the Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

For the Avocado Lime Sauce:

1 ripe avocado

1/2 cup Greek yogurt or sour cream

Juice of 1 lime

1 garlic clove, minced

Salt, to taste

Fresh cilantro for garnish (optional)

For the Tacos:

8 small corn or flour tortillas

1 cup shredded cabbage or lettuce

1/2 cup diced tomatoes

1/4 cup chopped red onion

Lime wedges, for serving

Instructions

Prepare the Shrimp: In a large mixing bowl, combine the shrimp, olive oil, chili powder, cumin, garlic powder, smoked paprika, lime juice, salt, and pepper. Toss until the shrimp are evenly coated. Allow the shrimp to marinate for 15-20 minutes.

Make the Avocado Lime Sauce: While the shrimp marinate, in a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, minced garlic, and salt. Blend until smooth and creamy. Adjust the seasoning if necessary, and set aside.

Cook the Shrimp: Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.

Warm the Tortillas: In a separate skillet, warm the tortillas over medium heat for about 30 seconds on each side until they are pliable and slightly toasted.

Assemble the Tacos: On each tortilla, layer the shredded cabbage or lettuce, followed by the cooked shrimp, diced tomatoes, and chopped red onion. Drizzle with the creamy avocado lime sauce.

Serve: Garnish with fresh cilantro if desired and serve with lime wedges on the side for an extra zing.
