Easy Stuffed Bell Peppers with Ground Turkey

4 medium bell peppers (any color)

1 lb ground turkey

1 cup cooked quinoa (or rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, slice a small piece off the bottom to ensure they stand up straight (but be careful not to create a hole).

      Cook the Ground Turkey: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the finely chopped onion and sauté for about 3-4 minutes until translucent. Add the garlic and cook for an additional 1 minute.

        Add Turkey and Seasoning: Increase the heat to medium-high, and add the ground turkey. Season with Italian seasoning, paprika, salt, and pepper. Cook until the turkey is no longer pink, breaking it apart with a spatula, about 6-8 minutes.

          Combine the Filling: Once the turkey is cooked, stir in the drained diced tomatoes and cooked quinoa. Allow the mixture to cook for another 3-4 minutes so that the flavors meld together.

            Stuff the Peppers: Spoon the turkey mixture into each bell pepper, pressing down gently to pack it in. Place the stuffed peppers upright in a baking dish.

              Add Cheese: Sprinkle the shredded cheese evenly over the top of each stuffed pepper.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once done, remove from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy your delicious stuffed peppers!
