2 (6 oz) salmon fillets

1 cup uncooked jasmine rice

1 ½ cups water

1 cup broccoli florets

1 cup snap peas

½ cup shredded carrots

3 green onions, chopped

¼ cup teriyaki sauce (store-bought or homemade)

2 tablespoons sesame oil

1 tablespoon olive oil

1 tablespoon sesame seeds (optional)

Salt and pepper to taste

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and 1 ½ cups water. Bring to a boil, then reduce the heat to low and cover. Simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

    Prepare the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the broccoli and snap peas. Sauté for about 3-4 minutes until the vegetables start to soften. Add the shredded carrots and a pinch of salt and pepper. Cook for an additional 2 minutes until everything is tender yet crisp. Remove from heat and set aside.

      Cook the Salmon: In the same skillet, add the sesame oil and place the salmon fillets skin side down. Cook for about 4-5 minutes on medium-high heat, until the skin is crispy. Carefully flip the salmon and brush the top with half of the teriyaki sauce. Cook for another 4-5 minutes until the salmon is cooked through and flakes easily with a fork. (Cooking times may vary based on the thickness of the fillets.)

        Assemble the Bowls: Fluff the rice with a fork and divide it evenly among serving bowls. Top each bowl with sautéed vegetables and a salmon fillet. Drizzle the remaining teriyaki sauce over the salmon and vegetables.
