4 salmon fillets (about 6 ounces each)

1/2 cup soy sauce (low sodium preferred)

1/4 cup mirin (Japanese sweet rice wine)

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons green onions, chopped (for garnish)

1 cup jasmine or basmati rice

2 cups water

Steamed vegetables (e.g., broccoli, snow peas) for serving

Sesame seeds (for garnish)

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, mirin, honey (or maple syrup), sesame oil, minced garlic, and grated ginger until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, making sure it's well coated. Let it marinate for at least 30 minutes in the refrigerator (or up to 2 hours for deeper flavor).

      Cook the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice, a pinch of salt, and reduce the heat to low. Cover with a lid and simmer for 15-18 minutes, until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

        Prepare the Salmon: Preheat your grill or a nonstick skillet over medium-high heat. Remove the salmon from the marinade, reserving the marinade. Cook the salmon for about 4-5 minutes per side (if grilling), or until it flakes easily with a fork. If using a skillet, sear for 4-5 minutes on each side, then pour the reserved marinade over the cooked salmon and let it bubble for a minute to thicken slightly.

          Steam the Vegetables: While the salmon is cooking, steam your choice of vegetables (like broccoli and snow peas) for about 5-7 minutes, until crisp-tender.
