Easy Vegetable Stir-Fry with Tofu and Rice

Ingredients
  

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons soy sauce (plus more for serving)

1 tablespoon sesame oil

1 tablespoon olive oil

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas, trimmed

1 medium carrot, julienned

2 cloves garlic, minced

1-inch piece ginger, grated

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

2 cups cooked rice (white, brown, or jasmine)

Salt and pepper to taste

Instructions
 

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes and toss it in a bowl with 2 tablespoons of soy sauce. Allow it to marinate for about 10 minutes while you prepare the vegetables.

    Cook the Rice: If you don’t have cooked rice ready, prepare it according to package instructions. Ideally, this can be done ahead of time or while you’re cooking the stir-fry.

      Sauté Tofu: In a large skillet or wok over medium-high heat, add the sesame oil and olive oil. Once hot, add the tofu cubes, cooking until they are golden brown on all sides (approximately 6-8 minutes). Remove the tofu from the skillet and set aside.

        Stir-fry the Vegetables: In the same skillet, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Next, add the sliced red bell pepper, broccoli florets, snap peas, and julienned carrot. Stir-fry these veggies for 4-5 minutes, until they are crisp-tender.

          Combine and Toss: Return the cooked tofu to the skillet with the vegetables. Drizzle in a little extra soy sauce if desired, and toss everything together gently to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.

            Serve: Divide the cooked rice amongst serving plates and spoon the vegetable and tofu stir-fry over the rice. Garnish with chopped green onions and sesame seeds. Adjust seasoning with salt and pepper to taste.

              Enjoy: Serve immediately, with extra soy sauce on the side if desired!
