Easy Zucchini Pasta Bake

4 medium zucchinis, thinly sliced

2 cups marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

2 cloves garlic, minced

Salt and pepper, to taste

Olive oil, for drizzling

Fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: On a cutting board, use a mandoline or sharp knife to slice the zucchinis into thin rounds. Optionally, sprinkle them with a little salt and let them sit for about 15 minutes to draw out excess moisture. Pat dry with paper towels.

      Make the Cheese Mixture: In a medium-sized bowl, combine ricotta cheese, half of the shredded mozzarella (½ cup), grated Parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix until well blended.

        Layer the Ingredients: In a greased 9x13 inch baking dish, spread a little marinara sauce on the bottom. Layer half of the zucchini slices evenly over the sauce. Spread half of the cheese mixture on top, followed by half of the remaining marinara sauce. Repeat the layers with the remaining zucchini, cheese mixture, and sauce.

          Add the Final Toppings: Finish with the remaining shredded mozzarella on top. Drizzle a little olive oil over the top for extra flavor.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once baked, remove from the oven and let it cool for about 5 minutes. Garnish with fresh basil leaves before slicing and serving.
