4 large whole wheat tortillas

Prep the Veggies: Start by washing and chopping all the vegetables—diced bell peppers, chopped spinach, finely chopped red onion, and halved cherry tomatoes. Set aside.

    Make the Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.

      Cook the Veggies: In a large skillet, heat a drizzle of olive oil or cooking spray over medium heat. Add the red onion and bell peppers. Sauté for about 3-4 minutes until they are soft and fragrant.
