1 medium eggplant, sliced into 1/2-inch rounds

2 tablespoons olive oil

Salt and pepper, to taste

2 large ripe tomatoes, sliced

8 ounces fresh mozzarella cheese, sliced

1/4 cup fresh basil leaves

4 slices of sourdough or ciabatta bread

Balsamic glaze, for drizzling

Optional: garlic powder or minced garlic for added flavor

Prep the Eggplant: Sprinkle the eggplant slices with salt and set them aside for about 10 minutes to draw out moisture. Rinse and pat them dry with a paper towel.

    Grill the Eggplant: Preheat a grill pan or outdoor grill over medium heat. Brush both sides of each eggplant slice with olive oil and season with pepper (and garlic powder, if using).
