For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

Juice of 1 lime

For the Slaw:

2 cups green cabbage, shredded

1 cup red cabbage, shredded

1 cup carrots, shredded

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges, for serving

Additional cilantro, for garnish

Sliced jalapeños (optional)

Instructions
 

Marinate the Shrimp: In a bowl, combine the olive oil, chili powder, cumin, garlic powder, lime juice, salt, and pepper. Add the shrimp, ensuring they are coated well. Let them marinate for about 10-15 minutes while you prepare the slaw.

    Prepare the Slaw: In a large mixing bowl, combine the green cabbage, red cabbage, carrots, and cilantro. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth. Pour the dressing over the cabbage mixture and toss to combine. Set aside.

      Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.

        Warm the Tortillas: In a separate skillet or directly over the stove flame, warm the tortillas briefly on each side until pliable.

          Assemble the Tacos: On each tortilla, layer a generous portion of the slaw, followed by a few shrimp. Garnish with additional cilantro, sliced jalapeños (if desired), and a squeeze of lime juice.
