Festive Cranberry Turkey Stuffing Balls

1 pound ground turkey

2 cups stale bread, cubed

1 cup vegetable broth

1/2 cup dried cranberries, chopped

1/2 cup celery, finely chopped

1/2 cup onion, finely chopped

1/4 cup walnuts or pecans, chopped (optional)

1 teaspoon garlic powder

1 teaspoon dried sage

1/2 teaspoon thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 large egg, beaten

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Sauté the Vegetables: In a medium skillet over medium heat, add a splash of olive oil. Once heated, add the chopped onion and celery. Sauté for about 5 minutes or until the vegetables are tender and translucent. Remove from heat.

      Prepare the Mixture: In a large mixing bowl, combine the ground turkey, stale bread cubes, sautéed vegetables, chopped cranberries, nuts (if using), garlic powder, sage, thyme, salt, and pepper. Pour in the vegetable broth gradually while mixing until the mixture is moist but still holds its shape. Finally, add the beaten egg and mix until everything is well combined.

        Form the Balls: With your hands, take a small amount of the mixture (about 2 tablespoons) and roll it into a ball. Repeat the process until all the mixture is formed into balls and placed on the prepared baking sheet.

          Bake: Place the baking sheet in the oven and bake for 25-30 minutes or until the stuffing balls are golden brown and cooked through, reaching an internal temperature of 165°F (74°C).

            Garnish and Serve: Once done, remove the balls from the oven and let them cool slightly. Garnish with chopped fresh parsley before serving.
