1 ½ pounds boneless, skinless chicken breasts, sliced into thin strips

3 tablespoons olive oil, divided

2 ripe jalapeños, deseeded and finely chopped (adjust for spice preference)

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Juice of 2 limes (about ¼ cup)

Zest of 1 lime

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

Fresh cilantro, for garnish

Tortillas (flour or corn, for serving)

Optional toppings: sour cream, avocado, shredded cheese

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken strips, 2 tablespoons of olive oil, chopped jalapeños, minced garlic, cumin, smoked paprika, chili powder, lime juice, lime zest, salt, and pepper. Toss well to ensure the chicken is evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat. Once hot, remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced bell peppers and onion. Stir-fry for 5-6 minutes, or until the vegetables are tender and slightly charred. You can add the reserved marinade to the vegetables in the last minute of cooking for extra flavor.

        Combine Chicken and Veggies: Reintroduce the cooked chicken back to the skillet with the sautéed veggies. Toss everything together and cook for another 2 minutes to warm through and blend the flavors.

          Serve: Warm tortillas in a separate pan or microwave. To assemble, fill each tortilla with the chicken and vegetable mixture, then garnish with fresh cilantro and any additional toppings of your choice, such as sour cream, diced avocado, or shredded cheese.
