Ingredients

1 lb shrimp, peeled and deveined

1/4 cup cornstarch

2 tablespoons vegetable oil

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 teaspoons lime juice

1 teaspoon garlic powder

Salt and pepper to taste

1 head of butter lettuce or iceberg lettuce, leaves separated

1/4 cup green onions, chopped

1/4 cup cilantro, chopped

Sesame seeds for garnish

Lime wedges for serving

Instructions

Prepare the Shrimp: In a bowl, toss the peeled and deveined shrimp with cornstarch until fully coated. This will help create a crispy coating once cooked.

Make the Spicy Sauce: In another bowl, mix together the mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, salt, and pepper until well combined. Set aside.

Cook the Shrimp: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated shrimp in a single layer. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove from heat.

Assemble the Lettuce Cups: Take a butter lettuce leaf and spoon a few pieces of crispy shrimp into the center. Drizzle some of the spicy sauce over the shrimp.

Garnish: Top with chopped green onions and cilantro. Sprinkle sesame seeds over the filled lettuce cups for added texture and visual appeal.

Serve: Arrange the lettuce cups on a platter and serve with lime wedges on the side for an extra zesty kick.
