Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup ricotta cheese

2 large eggs

1/4 cup milk (more if needed)

1 teaspoon vanilla extract

2 tablespoons honey or sugar (adjust to taste)

1 cup fresh blueberries (plus extra for serving)

Butter or oil, for cooking

Maple syrup, for serving (optional)

Instructions

Prepare the Wet Ingredients: In a large mixing bowl, whisk together the ricotta cheese, eggs, milk, vanilla extract, and honey (or sugar) until the mixture is smooth and well combined.

Mix Dry Ingredients: In another bowl, combine the flour, baking powder, baking soda, and salt. Stir them together until evenly mixed.

Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Be cautious not to overmix; a few lumps are fine. If the batter seems too thick, add a splash more milk to reach a pourable consistency.

Fold in Blueberries: Carefully fold in the fresh blueberries, ensuring they’re evenly distributed throughout the batter.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.

Cook the Hotcakes: Pour about 1/4 cup of batter for each hotcake onto the skillet. Cook until bubbles start to form on the surface and the edges look set, about 3-4 minutes. Flip gently and cook for an additional 2-3 minutes, or until golden brown and cooked through.

Serve: Stack the hotcakes on a plate, top with additional blueberries, and drizzle with maple syrup if desired. Enjoy warm!
