8 oz. fusilli pasta (or any pasta of choice)

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, roughly torn

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1/4 cup pine nuts, toasted

Cook the Pasta: In a large pot of salted boiling water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, fresh mozzarella, and torn basil leaves. If you are using pine nuts, add them in at this stage for extra crunch.

        Dress the Salad: Pour the dressing over the pasta mixture. Carefully toss until everything is evenly coated in the dressing.
