Ingredients
  

2 cups mixed greens (arugula, spinach, and baby kale)

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 cup sweet corn, fresh or canned (drained)

1 ripe avocado, diced

1/2 cup red onion, thinly sliced

1 bell pepper (any color), diced

1/4 cup feta cheese, crumbled

1/4 cup pumpkin seeds (pepitas)

1/4 cup fresh basil leaves, chopped

Salt and pepper, to taste

For the Dressing:

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper, to taste

Prepare the Greens: In a large salad bowl, add the mixed greens as the base of your salad.

    Chop the Vegetables: Add the halved cherry tomatoes, diced cucumber, sweet corn, diced avocado, sliced red onion, and diced bell pepper to the bowl. Toss gently to combine.
