Fresh Tomato Tart

Ingredients
  

1 sheet of puff pastry (thawed)

4 medium ripe tomatoes (sliced)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 tablespoon olive oil

2 cloves garlic (minced)

1 teaspoon fresh basil (chopped)

1 teaspoon fresh thyme (chopped)

Salt and pepper to taste

1 egg (beaten, for egg wash)

Balsamic glaze (for drizzling)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Puff Pastry: Roll out the puff pastry on a floured surface to fit a tart pan (about 12 inches in diameter). Carefully transfer the pastry to the tart pan, pressing it firmly into the edges. Trim any excess pastry hanging over the edges.

      Blind Bake: Prick the bottom of the puff pastry with a fork and line it with parchment paper. Fill with pie weights or dried beans. Bake in the preheated oven for 10-12 minutes until lightly golden. Remove and let cool slightly.

        Prepare the Filling: In a small skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, then remove from heat.

          Assemble the Tart: Evenly spread the sautéed garlic over the baked puff pastry. Layer the sliced tomatoes over the garlic, slightly overlapping them. Sprinkle the shredded mozzarella and crumbled feta cheese over the tomatoes. Season with salt, pepper, fresh basil, and thyme.

            Egg Wash: Brush the edges of the tart with the beaten egg to give it a beautiful golden finish.

              Bake Again: Return the tart to the oven and bake for an additional 20-25 minutes, or until the cheese is bubbly and the edges of the pastry are golden brown.

                Final Touches: Remove from the oven and let cool for a few minutes. Drizzle with balsamic glaze before slicing.

                  Serve: Slice the tart into wedges and serve warm or at room temperature. Enjoy your refreshing and savory creation!
