Ingredients

4 cups of seedless watermelon, cut into 1-inch cubes

8 oz feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1 tablespoon balsamic glaze (plus extra for drizzling)

Pinch of freshly cracked black pepper

Pinch of sea salt

Wooden skewers or toothpicks (optional)

Instructions

Prepare the Watermelon: Start by cutting the watermelon into 1-inch cubes. Ensure they're as uniform as possible for even presentation.

Crumble the Feta: In a medium bowl, crumble the feta cheese if not pre-crumbled.

Mix with Mint: Add the chopped fresh mint leaves to the crumbled feta. Toss gently until well mixed.

Assemble the Bites: Using wooden skewers or toothpicks, thread one watermelon cube, followed by a generous dollop of the feta-mint mixture, and then top with another watermelon cube. Repeat until all ingredients are used.

Season: Transfer the assembled bites to a serving platter. Drizzle them with balsamic glaze and sprinkle lightly with freshly cracked black pepper and sea salt.

Serve Chilled: Refrigerate for about 10-15 minutes to let the flavors mingle, then serve chilled as an appetizer or a refreshing snack.
