Ingredients

1 cup frozen mixed berries (strawberries, blueberries, raspberries)

1 cup coconut cream (chilled)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup unsweetened shredded coconut

1/4 cup chopped nuts (almonds, walnuts, or pecans) for crunch (optional)

1/4 cup dark chocolate chips (optional for drizzling)

Instructions

Prepare the Berry Mixture: In a mixing bowl, combine the frozen mixed berries with honey or maple syrup, vanilla extract, and salt. Gently mash the berries with a fork while leaving some chunks for texture. Set aside.

Whip the Coconut Cream: In a separate bowl, scoop the chilled coconut cream (the solidified part, leaving any liquid behind) and whip it using a hand mixer or whisk until it’s creamy and fluffy (about 2-3 minutes).

Fold and Combine: Gently fold the berry mixture into the whipped coconut cream until well combined. Be careful not to overmix, as you want to maintain the berry swirls in the cream.

Shape the Clusters: Line a baking sheet or tray with parchment paper. Using a spoon or cookie scoop, dollop spoonfuls of the creamy berry mixture onto the prepared sheet. Flatten each cluster slightly with the back of the spoon.

Add Toppings: Sprinkle the shredded coconut and chopped nuts on top of each cluster for added flavor and texture. If you’re using chocolate chips, melt them in a microwave or double boiler, and drizzle over each cluster.

Freeze: Place the tray in the freezer for at least 2-4 hours until the clusters are firm and frozen.

Serve: Once frozen, you can take them out of the freezer and enjoy immediately or store them in an airtight container for up to a month. If storing, let them sit at room temperature for a few minutes before consuming for the best texture.
