Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup fresh blackberries (plus extra for garnish)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract (optional)

1 tablespoon lemon juice

Pinch of salt

Silicone ring mold (or any round mold of choice)

Instructions

Prepare the Blackberry Mixture: In a blender or food processor, combine the fresh blackberries, honey or maple syrup, lemon juice, and a pinch of salt. Blend until smooth. You can leave some small chunks for texture if desired.

Mix the Yogurt: In a separate bowl, mix the Greek yogurt with the vanilla extract (if using) until well combined. Taste and adjust the sweetness if necessary.

Layering: Depending on your preference, you can either layer the yogurt and blackberry mixtures or swirl them together. For a layered effect, pour a layer of the Greek yogurt into each section of the silicone mold, followed by a layer of the blackberry mixture. Repeat until the molds are filled, finishing with a layer of yogurt. For a swirled version, alternate spoonfuls of each mixture in the molds and gently swirl with a skewer or knife.

Add Garnish: Place a few extra blackberries on top of each yogurt ring for an added visual appeal.

Freezing: Cover the molds with plastic wrap or a lid, and place them in the freezer. Freeze for at least 4-6 hours or until completely solid.

Unmold and Serve: Once frozen, you can let the molds sit at room temperature for a few minutes to loosen, then pop out the yogurt rings. Serve immediately or keep stored in an airtight container in the freezer for a refreshing treat!

Optional Serving Suggestion: Drizzle a bit of honey over the top before serving or accompany with a dollop of additional Greek yogurt.
