These bites combine antioxidant-rich blueberries with creamy coconut yogurt for a guilt-free snack perfect for any time of day. Easy to make and customizable, you can add your favorite nuts or sweeteners. Ingredients
  

2 cups fresh or frozen blueberries

1 cup coconut yogurt (dairy-free or regular)

1/2 cup shredded unsweetened coconut

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/4 cup chopped nuts (almonds, walnuts, or pecans – optional)

Pinch of sea salt

Instructions
 

Prepare the Blueberries: If using fresh blueberries, rinse them under cold water and pat them dry. If using frozen, ensure they are partially thawed and slightly soft for blending.

    Make the Base Mixture: In a medium bowl, combine the coconut yogurt, honey or maple syrup, vanilla extract, and a pinch of sea salt. Stir until smooth and well combined.

      Blend the Blueberries: In a blender or food processor, add the blueberries and pulse until a smooth puree forms, but still retains some blueberry chunks for texture. You can reserve a few whole blueberries for a fun surprise in the bites if desired.

        Combine Ingredients: Gently fold the blueberry puree into the coconut yogurt mixture using a spatula until evenly incorporated. If you reserved any whole blueberries, fold them in now. Add the chopped nuts if using and stir lightly to distribute.

          Prepare the Mold: Line a mini muffin tin or silicone mold with paper liners or lightly grease it with coconut oil to prevent sticking.

            Fill the Molds: Pour the blueberry-coconut mixture into the molds, filling each section about three-quarters full. Tap the tin gently on the counter to remove any air bubbles and level the mixture.

              Add Coconut Topping (Optional): Sprinkle the shredded coconut over the filled molds for a decorative touch.

                Freeze the Bites: Place the mold in the freezer and let it freeze for at least 2-3 hours, or until completely solid.
