Ingredients

1 pound large strawberries, hulled and with a small cavity created

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon lemon juice

1 cup graham cracker crumbs

1 tablespoon melted butter

1/4 cup chocolate chips (optional)

Whipped cream for topping (optional)

Instructions

Prepare the Strawberries:

    - Rinse the strawberries under cold water and pat them dry. Carefully hull the strawberries and use a small paring knife or a corer to create a cavity inside each strawberry.

      Make the Cheesecake Filling:

        - In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Add in the powdered sugar, vanilla extract, and lemon juice. Continue mixing until well combined and creamy.

          Fill the Strawberries:

            - Using a piping bag or a small spoon, fill each strawberry with the cheesecake mixture until they are generously filled.

              Prepare the Graham Cracker Crust:

                - In a separate bowl, mix the graham cracker crumbs with the melted butter until the crumbs are evenly coated.

                  Coat the Cheesecake Filling:

                    - Roll the filled strawberries in the graham cracker mixture until the cheesecake filling is lightly coated. This adds a delightful crunch!

                      Chill the Strawberries:

                        - Arrange the coated strawberries on a baking sheet lined with parchment paper. Place them in the freezer for at least 2 hours or until firm.

                          Optional Chocolate Drizzle:

                            - If using chocolate chips, melt them in a microwave-safe bowl in intervals of 20 seconds until fully melted and smooth. Drizzle over the frozen strawberries for an added touch of sweetness.

                              Serve:

                                - Remove the strawberries from the freezer and let them sit for a few minutes to soften slightly. Top with a dollop of whipped cream if desired, and enjoy your frozen cheesecake stuffed strawberries!
