Once your oat mixture is well combined, it’s time to add the star of the show: the frozen cherries. Gently fold in the frozen cherry halves, ensuring they are evenly distributed throughout the mixture. This not only adds a delightful burst of flavor to each bite but also infuses a beautiful color throughout the clusters. Ingredients

2 cups rolled oats

1 cup frozen cherries, pitted and halved

1/2 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup shredded coconut (optional)

1/4 cup chopped nuts (e.g., almonds or walnuts, optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the rolled oats, salt, and any optional shredded coconut or chopped nuts. Mix well.

Blend Wet Ingredients: In another bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet mixture over the dry oat mixture and stir until all the ingredients are well-combined and the oats are evenly coated.

Add Cherries: Gently fold in the frozen cherry halves until evenly distributed in the mixture.

Shape the Clusters: Line a baking sheet with parchment paper. Using a spoon, drop small clusters of the mixture onto the prepared sheet, pressing them down slightly for shape.

Freeze the Clusters: Place the baking sheet in the freezer for about 1-2 hours, or until the clusters are fully set and firm.

Store and Serve: Once frozen, transfer the clusters to an airtight container for storage. Enjoy straight from the freezer as a refreshing snack or dessert!
