1 fresh pineapple, peeled, cored, and cut into 1-inch cubes

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil

1/4 cup shredded coconut (unsweetened or sweetened, based on preference)

1/4 cup chopped nuts (such as almonds or pistachios)

Sea salt (optional, for sprinkling)

Instructions
 

Prepare the Pineapple: Start by peeling and coring the fresh pineapple, then cut it into 1-inch cubes. If using fresh pineapple is not an option, pineapple chunks can be frozen ahead of time.

    Freeze the Pineapple: Place the pineapple cubes on a baking sheet lined with parchment paper and freeze for about 1-2 hours, or until they are completely frozen.

      Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

        Dip the Pineapple: Remove the frozen pineapple cubes from the freezer. One at a time, dip each pineapple cube into the melted chocolate, ensuring it's fully coated. Use a fork to lift the pineapple out and let the excess chocolate drip off.
