Ingredients

2 cups Greek yogurt (plain or vanilla)

1/2 cup pure cocoa powder

1/4 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1/2 cup unsalted pistachios, shelled and roughly chopped

1/4 cup mini chocolate chips (optional)

Pinch of salt

Silicone muffin cups or silicone ice cube trays

Instructions

Mix the Base: In a large bowl, combine the Greek yogurt, cocoa powder, honey or maple syrup, vanilla extract, and a pinch of salt. Whisk until all ingredients are well blended and the mixture is smooth and creamy.

Add the Crunch: Gently fold in the chopped pistachios and mini chocolate chips, if using, ensuring an even distribution throughout the yogurt mixture.

Fill the Molds: Spoon the mixture into silicone muffin cups or ice cube trays, filling them about three-quarters full. You can smooth the tops with a spatula or the back of a spoon.

Freeze: Place the filled molds in the freezer and let them freeze for at least 4 hours or until solid.

Serve: Once frozen, carefully pop the yogurt cups out of the molds. You can serve them directly or place them on a serving platter for an attractive display.

Garnish (Optional): Drizzle with extra honey or sprinkle additional chopped pistachios over the top before serving for an extra touch of flavor and presentation.

Storage: Store any leftovers in an airtight container in the freezer for up to two weeks. Just remember to let them sit at room temperature for a couple of minutes before enjoying for the best texture.
