1 cup unsweetened shredded coconut

1 cup coconut cream (chilled)

1/2 cup maple syrup or honey

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup mixed berries (fresh or frozen; choose from strawberries, blueberries, and raspberries)

1/4 cup chopped almonds or walnuts (optional, for crunch)

Zest of 1 lime (for a refreshing zing)

Instructions
 

Prepare the Base: In a mixing bowl, combine the unsweetened shredded coconut, coconut cream, maple syrup (or honey), vanilla extract, and sea salt. Stir until well combined and forming a creamy mixture.

    Layer the Mixture: Line an 8x8 inch (20x20 cm) baking dish with parchment paper, allowing some overhang for easy removal later. Pour half of the coconut mixture into the prepared dish and spread evenly to form a base layer.

      Add the Berries: Gently scatter the mixed berries over the base layer. If using frozen berries, ensure they are evenly distributed, and you can slightly press them into the layer.

        Top it Off: Spoon the remaining coconut mixture over the berries, spreading it evenly to cover. Tap the dish on the counter gently to ensure there are no air pockets.

          Add Crunch (optional): If you’re using nuts, sprinkle the chopped almonds or walnuts over the top, pressing them down lightly to help them adhere.

            Zest it Up: Sprinkle the lime zest over the top layer for an added burst of flavor.

              Freeze: Cover the dish with plastic wrap or its lid and place it in the freezer for at least 4 hours, or until it is completely frozen and firm.

                Slice and Serve: Once frozen, remove the dish from the freezer and lift the coconut berry squares out using the parchment paper overhang. Slice into squares and serve immediately or store in an airtight container in the freezer for future enjoyment.
