2 ripe mangoes, peeled and cubed

1 cup coconut milk (canned or carton)

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup unsweetened shredded coconut (optional, for extra texture)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Mangoes: In a blender, combine the cubed mangoes, coconut milk, honey (or agave syrup), vanilla extract, and sea salt. Blend until smooth and creamy, ensuring there are no lumps.

    Add Texture (Optional): If you like a bit of chewiness in your popsicles, stir in the shredded coconut to the blended mixture.

      Fill the Molds: Pour the mango coconut mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze. If you want, you can layer the mixture by filling halfway, freezing for about 30 minutes, and then adding a layer of shredded coconut before filling to the top.

        Insert Sticks: Place the popsicle sticks into the molds. Make sure they are centered and standing upright.

          Freeze: Place the molds in the freezer. Allow them to freeze for at least 4-6 hours, or until solid.

            Release the Popsicles: To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull on the popsicle stick to release.
