Frozen Grapefruit Sparkle Cups

2 large pink grapefruits

1 cup fresh-squeezed grapefruit juice (from the grapefruits)

1 cup sparkling water (chilled)

1/4 cup honey or agave syrup (adjust to taste)

Zest of 1 grapefruit

Fresh mint leaves, for garnish

Optional: tonic water for extra fizz

Prepare the Grapefruits: Cut the grapefruits in half and carefully scoop out the flesh, leaving the skin intact to use as cups. Set the skins aside and place the grapefruit flesh in a blender.

    Blend the Juice: Blend the grapefruit flesh until smooth. Strain the mixture through a fine-mesh sieve into a bowl to remove the pulp, ensuring you have a smooth juice.

      Mix the Ingredients: In a large mixing bowl, combine the fresh grapefruit juice, honey (or agave syrup), and grapefruit zest. Stir well until the honey is dissolved completely.

        Add Sparkle: Slowly mix in the chilled sparkling water, being careful to preserve the fizz. Taste the mixture and adjust sweetness, adding more honey if desired.

          Fill the Cups: Pour the grapefruit sparkle mixture into the empty grapefruit halves, filling them to the brim. Place the filled cups in a tray to keep them upright.

            Freeze: Cover the cups with plastic wrap and place them in the freezer for at least 4 hours or until completely frozen.

              Serve: To serve, remove the Frozen Grapefruit Sparkle Cups from the freezer and let them sit for about 5 minutes at room temperature to soften slightly. Use a fork to scrape the surface of the frozen mixture for a granita-like texture.
