8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/4 cup mini chocolate chips (optional)

Prepare the Strawberries: Start by washing the fresh strawberries thoroughly. Hull the strawberries and cut them in half. Set aside.

    Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the powdered sugar and continue mixing until well combined. Stir in the vanilla extract until the mixture is creamy and fluffy.

      Create the Crust Mixture: In another bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

        Assemble the Bites: Line a mini muffin pan with cupcake liners. Take about a tablespoon of the crust mixture and press it into the bottom of each liner, forming a firm base.
