Frozen Strawberry Cheesecake Pops

2 cups fresh or frozen strawberries, hulled

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup Greek yogurt (plain or vanilla flavored)

¼ cup crushed graham crackers

2 tbsp melted butter

Pinch of salt

Popsicle molds and sticks

Instructions
 

Prepare the Strawberry Puree: If using fresh strawberries, wash, hull, and chop them. If using frozen, slightly thaw them. Blend the strawberries in a blender or food processor until smooth. Set aside.

    Make the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and continue mixing.

      Add Yogurt and Flavor: Mix in the vanilla extract and Greek yogurt until well combined and smooth. Taste and adjust the sweetness if needed by adding more powdered sugar.

        Combine Astounding Layers: In a separate small bowl, mix the crushed graham crackers, melted butter, and a pinch of salt until combined. This will create a crust layer.

          Layering the Pops: Begin by adding a tablespoon of the graham cracker mixture to the bottom of each popsicle mold. Press down gently to form a crust.

            Fill with Cheesecake Mixture: Spoon or pipe the cheesecake mixture over the graham cracker layer until the mold is about halfway full.

              Add Strawberry Puree: Top the cheesecake layer with a layer of strawberry puree. You can create swirls by slightly mixing it with a toothpick or skewer.

                Finish with Cheesecake Layer: Add another layer of the cheesecake mixture on top of the strawberry puree, filling the molds nearly to the top.

                  Insert the Sticks: Carefully insert popsicle sticks into the center of each mold.

                    Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

                      Unmold and Serve: Once the pops are fully frozen, run warm water over the outside of the molds for a few seconds to help release them. Gently pull the pops from the molds.

                        Garnish (optional): Dip the tops in melted chocolate and sprinkle with additional crushed graham crackers or serve with extra strawberry puree drizzled on top.
