Ingredients

2 cups fresh strawberries, hulled and chopped

2 ripe kiwis, peeled and sliced

1 cup coconut yogurt (or Greek yogurt)

1 cup coconut water (or any fruit juice)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

Optional: fresh mint leaves for garnish

Instructions

Prepare the Base: In a blender, combine the chopped strawberries, sliced kiwis, coconut yogurt, coconut water, honey (or maple syrup), lime juice, and vanilla extract. Blend until smooth and well combined.

Taste and Adjust: Taste the mixture to see if it needs additional sweetening. Add more honey or maple syrup if desired, and blend again.

      Layer Your Pops:

        - If you want a beautiful layered effect, pour half of the smoothie mixture into popsicle molds.

          - Then, add a layer of sliced strawberries and kiwi (for texture and added visual appeal).

            - Pour the remaining smoothie mix on top, filling each mold to the top.

Insert Sticks: Place popsicle sticks into the molds. Make sure they’re centered and straight.

Freeze: Put the molds in the freezer and freeze for at least 6-8 hours, or until completely solid.

Unmold and Serve: Run warm water over the outside of the molds for a few seconds to easily release the popsicles. Serve immediately, garnished with fresh mint leaves if desired.

Prep Time: 15 minutes | Total Time: 8 hours | Servings: 6 popsicles
