Ingredients

1 cup fresh blueberries

1 cup heavy whipping cream

1 cup Greek yogurt (vanilla-flavored)

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup granola (for topping, optional)

Instructions

Prepare the Blueberries: Start by rinsing the fresh blueberries thoroughly under cold water. Pat them dry and set aside. If you prefer, you can also toss the blueberries with a teaspoon of honey for extra sweetness.

Make the Cream Mixture: In a large mixing bowl, combine the heavy whipping cream, Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Using an electric mixer or whisk, beat until soft peaks form. Be careful not to over-whip; you want it fluffy and light.

Incorporate the Blueberries: Gently fold in the prepared blueberries into the whipped cream mixture until they are uniformly distributed.

Mold the Bites: Using a silicone ice cube tray or mini muffin tin, carefully spoon the blueberry cream mixture into each mold, filling them about 3/4 full for an easy pop-out later.

Optional Topping: If you want to add a little crunch, sprinkle a small amount of granola on top of each filled mold.

Freeze: Place the tray in the freezer for at least 4 hours, or until completely frozen.

Serve: Once frozen, carefully pop out the cream bites from the molds. You can let them sit at room temperature for a couple of minutes to soften slightly for easier eating.

Enjoy: Serve immediately as a refreshing snack or dessert. They can be kept in a sealed container in the freezer for up to two weeks.
