Frozen Watermelon Lime Popsicles

4 cups of seedless watermelon, cubed

1/4 cup of freshly squeezed lime juice (about 2-3 limes)

2 tablespoons of honey or agave syrup (adjust based on sweetness of watermelon)

A pinch of salt

Lime zest (from 1 lime, optional for extra zing)

Instructions
 

Prepare the Watermelon: Start by cutting the watermelon into cubes and placing them in a blender. Blend until smooth, ensuring there are no large chunks remaining. You should have about 4 cups of pureed watermelon.

    Mix Ingredients: In the blender with the watermelon puree, add the freshly squeezed lime juice, honey (or agave syrup), a pinch of salt, and lime zest if using. Blend once more until all ingredients are well combined and the mixture is smooth.

      Taste Test: Before pouring into molds, taste the mixture and adjust sweetness if needed by adding more honey/agave or lime juice for tartness. Blend again if you add any more ingredients.

        Pour into Molds: Carefully pour the watermelon-lime mixture into popsicle molds. Leave a little space at the top of each mold to allow for expansion as they freeze. If you have any leftover mixture, feel free to pour it into ice cube trays to enjoy as flavored ice.

          Insert Sticks: If your popsicle molds require sticks, insert them into the center of each mold. If using a lid, place it on securely to hold the sticks in place.

            Freeze: Place the filled molds into the freezer and freeze for at least 4 to 6 hours, or until completely solid.

              Unmold: To release the popsicles, run warm water over the outside of the molds for about 30 seconds or gently pull the sticks. Enjoy immediately!
