Ingredients

15 Medjool dates, pitted

1/2 cup almond butter (smooth or crunchy)

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (optional, for drizzling)

1/4 cup chopped nuts (almonds, walnuts, or pecans for topping)

Instructions

Prepare the Dates: Cut each pitted date lengthwise without cutting all the way through and gently open them, creating a pocket. Set aside.

Mix the Filling: In a medium bowl, combine almond butter, honey or maple syrup, vanilla extract, and sea salt. Stir until smooth and well combined.

Fill the Dates: Using a small spoon or a piping bag, fill each opened date with the almond butter mixture. Make sure not to overfill them to keep it neat.

Coat with Yogurt: Dip each filled date into the Greek yogurt, ensuring they are fully coated. Shake off any excess yogurt and place the coated dates on a lined baking sheet.

Freeze the Clusters: Arrange the filled and yogurt-coated dates on a baking sheet in a single layer. Freeze for at least 2 hours, or until the dates are completely set.

Optional Drizzle: In a microwave-safe bowl, melt the dark chocolate chips in 30-second increments, stirring in between until smooth. Once melted, drizzle over the frozen yogurt clusters for an extra touch of sweetness.

Add Toppings: Sprinkle the chopped nuts over the drizzled chocolate while it's still wet to ensure they stick.

Final Freeze: Return the clusters to the freezer for an additional 30 minutes to set the chocolate.

Enjoy: Once fully frozen, remove the clusters from the baking sheet and store in an airtight container in the freezer. Enjoy straight from the freezer for a delicious and healthy treat!
