Ingredients

2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut

1/2 cup chopped almonds (toasted for extra flavor)

1/2 cup dark chocolate chips (or melting chocolate)

Pinch of sea salt

Instructions

Prepare the Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

Add Coconut and Almonds: Gently fold in the shredded coconut and chopped almonds into the yogurt mixture. Make sure they are evenly distributed.

Spread and Freeze: Line a baking dish (approximately 8x8 inches) with parchment paper. Pour the yogurt mixture into the dish and spread it out evenly, smoothing the top with a spatula. Cover with plastic wrap and place it in the freezer for about 4 hours or until firm.

Prepare Chocolate Coating: While the yogurt is freezing, melt the dark chocolate chips in a microwave-safe bowl or over a double boiler. If using the microwave, heat in 30-second increments, stirring in between until smooth.

Slice and Dip: Once the yogurt base is fully frozen, remove it from the freezer. Lift the yogurt out of the dish using the parchment paper. Place it on a cutting board and slice it into rectangles or squares, about 1 inch wide.

Coat with Chocolate: Dip each slice halfway into the melted chocolate, allowing any excess to drip off. Place the chocolate-coated slices on a baking sheet lined with parchment paper.

Sprinkle and Set: Before the chocolate sets, sprinkle a pinch of sea salt on top of each slice for a touch of flavor. Once all slices are coated, return them to the freezer for an additional 30 minutes to set the chocolate.

Serve: After the chocolate has hardened, remove the slices from the freezer. Enjoy immediately or store in an airtight container in the freezer to enjoy later.
