Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1/4 cup almond butter

1 tablespoon vanilla extract

1/4 cup poppy seeds

1/2 cup slivered almonds

1/4 teaspoon sea salt

1/2 cup fresh or frozen blueberries (optional)

1/4 cup unsweetened shredded coconut (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), almond butter, vanilla extract, and sea salt. Whisk until smooth and creamy.

Incorporate the Dry Ingredients: Gently fold in the poppy seeds and slivered almonds into the yogurt mixture. If you're using blueberries or shredded coconut, fold these in as well for added texture and flavor.

Line the Pan: Line an 8x8 inch square baking dish or a similar-sized pan with parchment paper, leaving some overhang for easy removal.

Spread the Mixture: Pour the yogurt mixture into the prepared pan, using a spatula to evenly spread it out. Smooth the top for an even finish.

Freeze Until Firm: Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours or until the mixture is completely firm.

Slice into Bars: Once set, remove the bars from the freezer and lift the mixture out of the pan using the parchment paper. Slice into bars or squares of your desired size.

Serve and Store: Enjoy immediately or store the bars in an airtight container in the freezer. Let them sit at room temperature for a few minutes before serving if you prefer a softer texture.
