Ingredients

3 large Granny Smith apples, peeled and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 cup brown sugar

1/4 cup granola (optional, for texture)

2 cups vanilla yogurt (can be Greek or regular)

1 teaspoon vanilla extract

1/4 cup crushed graham crackers (for topping)

Instructions

Prepare the Apples: In a large mixing bowl, combine the diced apples with lemon juice, ground cinnamon, nutmeg, and brown sugar. Toss gently until all the apple pieces are coated. Let them sit for about 10 minutes to allow the flavors to meld.

Create the Yogurt Mixture: In another bowl, stir together the vanilla yogurt and vanilla extract until well combined.

Combine: Add the spiced apples to the yogurt mixture and fold gently until the apples are evenly distributed throughout the yogurt.

Add Granola: If desired, gently fold in the granola for an extra crunch, using a rubber spatula to avoid breaking the granola pieces.

Fill Molds: Spoon the yogurt-apple mixture into silicone ice cube trays or muffin tins, filling them about three-quarters full. Tap the trays lightly on the counter to remove air bubbles and ensure even filling.

Freeze: Place the trays in the freezer for at least 4-6 hours, or until completely frozen.

Serve: Once frozen, pop the chunks out of the molds, and sprinkle crushed graham crackers on top for added texture and flavor. Serve immediately!

Storage: Store any leftovers in an airtight container in the freezer for up to a month.
