Ingredients

For the Apple Filling:

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

2 tablespoons brown sugar

1 tablespoon all-purpose flour

For the Yogurt Sandwiches:

2 cups Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup (adjust sweetness to preference)

1 teaspoon vanilla extract

1 cup granola (for texture)

12 graham crackers (or cookies of choice)

Instructions

Prepare the Apple Filling:

In a medium bowl, combine the diced apples, lemon juice, cinnamon, brown sugar, and flour. Toss until the apples are evenly coated. Let the mixture sit for about 10 minutes to allow the flavors to meld and the apples to release some juices.

      Cook the Apples:

In a skillet over medium heat, add the apple mixture and cook for about 5-7 minutes, stirring occasionally, until the apples are tender and slightly caramelized. Remove from heat and let cool completely.

          Prepare Yogurt Mixture:

In a separate bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined and smooth. Taste and adjust sweetness as desired.

              Assemble the Sandwiches:

Take a graham cracker and spread a layer of the yogurt mixture on top (about 2 tablespoons). Spoon a layer of the cooled apple filling over the yogurt, then top with a sprinkle of granola for crunch. Place another graham cracker on top to create a sandwich.

                  Freeze:

Place the completed yogurt sandwiches on a baking sheet lined with parchment paper. Freeze for at least 2-4 hours, or until fully set.

                      Serve:

Once the sandwiches are frozen, cut them in half if desired, and serve immediately. Enjoy the refreshing taste of frozen yogurt paired with the warm flavors of apple pie!
