Ingredients

For the Banana Bread Base:

2 ripe bananas, mashed

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 cup all-purpose flour

1/2 teaspoon cinnamon (optional)

For the Frozen Yogurt Layer:

2 cups vanilla yogurt (Greek yogurt works great!)

1/2 teaspoon vanilla extract

1/3 cup honey or maple syrup

1/2 cup mini chocolate chips (optional)

For the Crunch Topping:

1/2 cup granola

1/4 cup chopped nuts (walnuts or pecans)

1 tablespoon melted coconut oil

1 tablespoon sweetener (honey, maple syrup, or brown sugar)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

Make the Banana Bread Batter: In a mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract. Mix well until smooth.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

Bake the Banana Bread Base: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 15–18 minutes or until a toothpick inserted comes out clean. Let cool for about 5 minutes in the pan before transferring to a wire rack.

Prepare the Frozen Yogurt Mixture: In a bowl, mix together the yogurt, vanilla extract, and honey or maple syrup until well combined. If using, fold in the mini chocolate chips.

Assemble the Cups: Once the banana bread bases are completely cool, spoon a generous layer of the frozen yogurt mixture on top of each cup. Smooth the tops with a spatula.

Make the Crunch Topping: In a small bowl, mix together the granola, chopped nuts, melted coconut oil, and sweetener until everything is evenly coated. Sprinkle the crunch topping over the frozen yogurt layer in each cup.

Freeze: Place the cups in the freezer for at least 2 hours to set the yogurt layer.

Serve: Remove the cups from the freezer about 5–10 minutes before serving to allow them to soften slightly. Enjoy your delightful treats!
